After creating a big mess trying to make the famous Jay Fai crab omelette, I decided to come up with a simpler, more practical way of doing a rolled up crab omelette at home.
The shredded Beaufort cheese pairs really well with the crab and adds not only flavour but also gives it a lovely creaminess! By using a sushi mat also makes it easy to roll up the omelette tightly. If you aren’t too fussed about the presentation, then you can simply fold the omelette over the crab filling.
It’s the kind of dish you can have for a quick lunch, snack or pretty much anytime that’s also Keto friendly if you switch to real crab meat.
Ingredients:
Shredded Beaufort Cheese 1 cup –
Diced crab meat (surimi) 1 cup
Eggs 3
Lemon juice 1 Tbsp
White pepper 1 tsp
Chopped scallions 1 stalk
