Once known as ‘poor man’s caviar’, lentils are now showcased on the menu of Michelin-starred restaurants all over the world.
Among the most sought after lentils are the ones grown in the Puy-en-velay, a variety that only exists in France. Usually smaller than other lentils, they sport a bluish green colour that comes from anthocyanin, a pigment found in blueberries or black grapes.
Jean François Beraud, a Puy lentil grower and chef Philippe Brun show us all about this French culinary gem.
