Ingredients:
Custard Sauce
Milk 250ml
Vanilla extract 1 tsp
Egg yolk 2 nos.
Sugar 75g
Salt ¼ tsp

Directions:
1. Fill the casserole pot of the La gourmet Double Boiler with 1L of water and allow to come to a boil, then reduce to a light simmer.
2. In a heavy base pot, heat milk on low flame. In a medium bowl, whisk egg yolks with sugar, vanilla and salt until all the sugar dissolves and mixture is thick and pale.
3. Once milk starts to simmer, remove from heat and stream in to egg mixture while continuously whisking.
4. Place custard mixture into the top universal steamer insert, and place on the casserole pot.
5. Cook custard on the double boiler while stirring constantly until sauce thickens. Sauce is done once it can cover the back of a spoon. Do not overcook as mixture will start to curdle.
6. Remove from heat and allow to cool.
7. Serve custard sauce along with bread pudding or apple pie.
