put turkey breast into bag and either use a vacuum sealer or the water immersion or water displacement method to remove all the air from the bag. Add the hottest water you can from your tap to the pot to the max fill line or a little above. Enough to cover the food. Add food to pot. Put lid on and close but DO NOT SEAL THE VALVE. You are not pressure cooking and need to leave value open to vent. Press the Sous-vide button and set temp to 165F, then press Sous-vide button again then add in cooking time of min 2.5 hours up to 5 hours depending on size. I set for 3 hours.
