Pork belly confit with baby arugula, black currant demi-glaze and parmesan on a fresh-grilled, homemade flatbread
Rabbit and chorizo stew with garbanzo beans in a tomato saffron broth made with Griffon Red Ale
Braised bear in hand-made ravioli with a creamy butternut squash sauce with brown butter and sage
Lamb belly pie with parsnips and sweet potatoes in St. Ambroise stout-based gravy, served with cranberry jelly
Oxtail braised in St Ambroise Scotch Ale and jerk merinade, served on grilled French bread, with fennel, pickled carrots and cucumber with St. Ambroise mustard
Frites topped with beef tartar, served with pea shoots and Jonny’s chimichurri aioli
Poached pears in St. Ambroise Apricot Wheat Ale and cinnamon, served with oatmeal crumble and French vanilla ice cream.
