Pav-Bhaji which literally translates to bread and vegetables is a popular street food in India, especially in Maharashtra. This recipe was inspired by the vendor that we used to go to as children. While most vendors would make this dish primarily with potatoes, tomatoes and green peas, our favorite one used to transform vegetables like cabbage, cauliflower, green beans along with potatoes and peas into the most divine concoction! Bonus points for this working mama for turning it into a one pot meal in a pressure cooker…Enjoy!
