Do you just put all the ingredients, without mixing or kneading and not worry about the bread rising or falling?
Yes, follow the recipe in the order that you place ingredients in the machine and it does all the work.
It mixes, kneads, rises, and bakes. It even keeps the bread warm when done, and has a delay timer to have bread ready at a certain time.
Can it make, or help make sourdough bread?
To make sourdough bread you need a sourdough starter. A sourdough starter can be made from scratch, you can try googling how to make a sourdough starter. With the sourdough starter, you could then bake bread using the bread machine, but it would look like a traditional loaf, not like an artisan round that one might associate with a crusty loaf of sourdough bread. This bread machine doesn’t have a specific pre-programmed setting for sourdough.
Can you make a dough, like for pasta, and not bake it?
You might be able to use the Pizza Dough setting to mix the pasta dough.
Notice there is also a knead setting.
