I will show you how easy it is to make delicious bite sized French almond cakes! The two key ingredients to making this classic French dessert is brown butter and almond flour. I also add some almond extract to give them extra almond flavor!

INGREDIENTS

50 grams – all purpose or cake flour (Einkorn flour also works very well for this recipe as it enhances the nutty flavor)

60 grams – almond flour ( blanched or un blanched is fine also)

150 grams – powdered sugar

3 egg whites

150 grams of unsalted butter that has been browned.

Optional additions – 1 tsp vanilla extract and 1 tsp almond extract. (I like adding both to my financiers)

Follow instructions in video for making the batter.

Once batter is made cover with clear wrap touching the batter and place in fridge for one hour.

Bake in preheated oven at 390 F ( 200c) for first 5 minutes then reduce the heat to 355 F (180 c) and bake for another 8 to 10 minutes.

If you are using a mini muffin pan like I did, you will want to watch the oven to make sure not to burn them – as they baked a little faster than I expected.

You can also use a large muffin pan, but only fill half way.

The original financiers were made in rectangular mini loafs pans and meant to resemble gold bars and they were sold in the financial districts in France back in the day.
