In this video I will show you how to make delicious petite French almond cakes. The two key ingredients to making this classic French dessert is the browned butter and almond flour. I also like to add almond and vanilla extract to give them extra almond flavor!

Ingredients
*Amount below will make about 10 small cakes in a muffin pan or one larger cake in a 9″ round pan.
50 grams – I used Einkorn flour for this recipe – but you can use all purpose or cake flour as well.
60 grams – almond flour ( blanched or un blanched )
120 grams – powdered sugar
3 egg whites
150 grams of unsalted butter that has been browned.
Optional additions – 1 tsp vanilla extract and 1 tsp almond extract. (I like adding both to this recipe.)

Follow instructions in video for making the batter. Once batter is made cover with clear wrap touching the batter and place in fridge for one hour.

For toppings you can use figs, cut into quarters – or you can use fresh raspberries, pears, peaches, blueberries, or chocolate chips.

***But only add a little bit of fruit as it tends to get dense and soggy in center if you add too much or really big pieces of fruit.***

Bake in preheated oven at 390 F ( 200c) for first 5 minutes then reduce the heat to 355 F (180 c) and bake for another 8 to 10 minutes. (Check doneness with a toothpick or knife.)

If you are using a mini muffin pan like I did, you will want to watch the oven to make sure not to burn them – mine were done at exactly 15 minutes.

You can also use a 9″ cake pan, line the bottom with parchment paper and only fill half way. Bake time will be a little longer – check at 15 minutes – then bake longer if toothpick inserted does not come out clean.
