The Bento Buster makes a French Grated Carrot Salad aka Carottes Râpées aka キャロットラペ with orange, walnuts and raisins. This is a French recipe popular in Japan. It goes great as a side dish, in a bento lunch box, or as a filling in a Japanese Sando (sandwich). It’s refreshing dish with plenty of flavor.
You will need:
4 Tbs white wine vinegar
1 tsp sugar
Salt and pepper
2 Tbs olive oil
2 carrots
1 orange
30g walnuts
15g raisins
Italian parsley

Method:
First make the dressing, in a bowl mix the wine wine vinegar, sugar, salt & pepper, once blended add the olive oil and mix well.

Roast walnuts in oven for 6 minutes at 200c. Once cooled break them into small pieces. If this is too much, you don’t have to roast them. Straight out of the packet is fine too.

Remove peel from the orange and cut out the orange segments. Cut these in to small pieces.

Grate the carrots

Add carrots to the dressing and mix well.

Garnish with finely chopped parsley, and a drizzle of olive oil.
