Whisky.com reviews the Waterford Ballykilcavan Edition 1.1. The Irish Waterford distillery has an approach to whisky production that is strongly oriented towards wine production. Only barley harvested in one particular place is used to capture the ‘terroir’ of the region. The barley for this bottling comes from Ballykilcavan Farm near Kilkenny, which also has a brewery. The soil in the area is known to produce particularly well maltable barley. In order to lose as little of the ‘terroir’ as possible, Waterford whisky is only distilled twice, unlike other Irish whiskeys. Maturation takes place in first-filled bourbon casks (45%) as well as French wine (28%) and sweet wine casks (27%).
