Self-Saucing Butterscotch Baked French Toast. The best French toast you’ve ever had. Lazy Sunday Brunch you can make ahead of time. It’s perfect for a crowd and makes a quick and easy Brunch show stopper.
Can’t stand the anticipation any longer here is the recipe.
½ cup butter
1 cup brown sugar
3 tablespoons maple Syrup
Pinch of salt
8 slices of bread
5 eggs
1 orange grated zest only
½ cup milk
1 cup cream
1 teaspoon vanilla essence
¼ tsp nutmeg
½ teaspoon cinnamon
2 tablespoons Cointreau
3 tablespoons liquid honey
Pinch of salt
Melt the butter in a small sauce pan over a medium heat, then add the brown sugar and maple syrup along with a pinch of salt. Stirring with a wooden spoon until the brown sugar is dissolved. Spread the mixture on a baking dish large enough for the 6 pieces of bread to fit in.
Lay the bread the bread cubes on top of the sugar mixture.
In a cake mixer fitted with a whisk. Whisk the eggs and orange zest until light and fluffy. Then add the milk, cream, vanilla essence, nutmeg, cinnamon, Cointreau, honey and pinch of salt. On a low seed mix all the ingredients together. Then pour over the bread and allow to soak overnight refrigerated or at the very least at room temperature for one hour.
If the bread has been soaking overnight remove from the refrigerator at least an hour before cooking.
Place in the cold oven and then set the temperature to 175°C (347°F) once it reaches temperature bake for 30-40 minutes until custard is set and crispy. Sprinkle with icing sugar and serve immediately with fresh berries and mascarpone cheese or whipped cream.

You can pimp out your Butterscotch Baked French Toast by adding before baking; stewed apples, berries, dried fruit or even chocolate chips. Perhaps just before serving top with some toasted pecans. When serving drizzle with a touch of caramelized balsamic vinegar
