One important stage didn’t happen during my 10-minute visit: fitting of the head pieces. Once the barrel is assembled, a slot is cut round the inside near the top and bottom of the barrel. The head pieces (top and bottom) have a circumference slightly bigger than the inner circumference of the barrel. They ares slid down and located in the slots. The steel rings are then tightened to squeeze the barrel staves together again and grip the head pieces. A short film by wine-pages.com made in the cooperage of Louis Latour in Burgundy.
