This is an easy, fast, low fat, low sugar, healthy option to your regular breakfast recipes!!
Make a single portion or double, triple, etc.. You for breakfast, brunch, lunch dinner or even after workouts!!
A wonderful option for a party, celebration, or for company too!!!
WW Blue 💙 WW Purple 💜 WW Green 💚 4sp
(if the green team uses regular eggs its an extra 2sp)
Ingredients:
Optional :
Turkey bacon or regular bacon or any protein
Fruit
Light Whip Cream or milk light Cool Whip
For the sandwich :
2 slices of whole wheat Betty Bread or any low fat brand 2sp
2 tbs Pb2 1sp or use whatever kind or brand of peanut butter you want
3 tbs of water
1 tbs of sugar free jam any flavour
For The Egg Mixture :
1 large or extra large egg (1/4 cup egg creations or beaters for the WW green)
1/4 cup egg whites
1 tsp vanilla
1/4 cup unsweetened almond milk or any low fat option
Sprinkle of cinnamon and salt
Directions :
Heat your large sprayed skillet on a medium to high temperature
In a large wide bowl:
Add egg, egg whites, milk, vanilla, salt
Whisk well and set aside
For the bread :
Add pb2 in a small bowl
Add water 1tbs at a time to get a peanut butter consistency
Add peanut butter to your bread (both sides or just one side is fine) and spread it with a small spatula
Add jam on top then add the bread to form a sandwich
Add sandwich into the egg mixture and soak on each side
Add to heated skillet
Allow to cook on each side until golden brown
Don’t keep flipping over and try to only flip sandwich once!
Add your favourite fruits, bacon, light cool whip/
Whip cream!!
