The perfect way to end your day when dieting or just eating healthier is with this super easy french recipe.
It is under 300 kcal per serving and goes perfect with tomatoes and wild rocket salad.

Ingredients for 2 servings:

7-8 shallots
75g baby mushrooms
1 tsp extra-virgin olive oil
4 skinless, boneless chicken thighs (approx. 370g)
2 smoked bacon rashers (removed excess fat and cut into small chunks)
50ml red wine Marsala
75ml chicken stock
Parsley
Salt
Chilli Flakes
Pepper

Steps:
1. Start by preheating the oven to 200°C.
2. Soak the shallots in hot water for 5 minutes and the peel their skin off.
3. Trim the visible fat off the chicken thighs. Place the shallots and the chicken thighs into an oven dish and drizzle with 1 tsp olive oil. Bake for 20 minutes.
4. Prepare the mushrooms, cut if too large.
5. After 20 minutes, take the dish out, turn the chicken thighs on the other side and add the mushrooms and bacon. Bake for 15 minutes.
6. Mix the red wine, chicken stock and parsley together and after 15 minutes add the mixture as well. Bake for another 5 minutes and serve with a salad.
