The baguette Jambon Beurre is a classic sandwich from Paris, but on my trip I didn’t get to try any. So I make baguettes, German style ham and fresh butter from scratch to see what it tastes like myself.

► German Style Boiled Ham Recipe
1,5kg pork ham or butt
1l water
150g curing salt
20g sugar
1 tsp caraway seeds
1/2 tsp coriander seeds
1/2 tsp garlic powder
10 peppercorns, crushed
10 juniper berries, crushed
1 bay leaf

► Baguette Recipe
100g + 400g strong wheat flour
3,5g dried yeast (half packet)
2 Tbsp whole spelt flour
50g sourdough starter (optional)
350g water
12,5g salt

► Smoky Salted Butter Recipe
500g heavy cream (at least 32%, 40% is better)
1 tsp smoked salt
