In the past month, I’ve seen several recipes for OEUFS EN COCOTTE, a delcious–and, as it turns out, low carb, perfectly KETO–way to prepare eggs. Here I give four methods for preparing this dish–slowest to fastest–all are WONDERFUL and probably a revelation to the North American palate.
