This works for many aromatics, but oak for sure – always smell your wines WITHOUT swirling the wine. The best time to do that is at the very beginning of a tasting when the wines have been poured and have rested for a least a few minutes. Along the same lines, oak notes can be the last to leave – like a single guy at a bar – so take note of aromas after the glass is empty.
Besides the different aromas/flavors you can find in French v. American Oak, the latter is generally more effusive. French Oak must be split by hand whereas American Oak has the ability to hold up to a saw which will open up a much greater amount of the wood grain. American Oak also has approx 400% more lactones compared to French Oak.
