Ingredients: Makes 10 -12 Crepes
[ with frying pan 20cm – 8 inches Ø ]

■ Wine Crepe Batter:
– Milk – 250ml / 1 Cup
– Eggs – 2 Large
– Flavor – 125g / 1 Cup
– Butter – 57g / 1/4 Cup
– Pinch of Salt
– Red Wine – 60ml / 1/4 Cup

■ Wine & Blueberries Syrup:
– Blueberries – 100g / 2/3 Cup
– Cinnamon Stick
– Orange – 4 Peel Strips
– White Sugar – 134g / 2/3 Cup
– Red Wine – 500ml – 2 Cups
– Cornstarch – 30g – 2 Tablesponns + Cold Water 3 Tablesponns.

Instructions:
– Mix Wine Crepe Batter
1. Mix Eggs and salt in a bowl, mix until combined.
2. Add half the milk.
3. Sift flour to remove lumps.
4. Add the remaining milk little by little.
5. Melted butter.
6. Red Wine.
7. We continue to mix everything well.
8. Place the batter in the refrigerator for 20 min.

– Wine & Blueberries Syrup
1. Add in a saucepan all the ingredients except the cornstarch.
2. Medium Heat.
3. Bring to a boil, constantly stirring, let boil 10 – 15 min.
4. Mix the Cornstarch with cold water.
5. Let boil 5 min.
Ready! This syrup is perfect to accompany meat, fish or vegetables!

– Cook Crepe Batter
1. Medium heat.
2. lightly grease the pan with oil or butter.
3. Pour the batter onto the griddle, tilt the pan a circular motion so that the batter
coats the surface evenly a thin layer.
4. Cook the crepe for about 2/3 min. on each side.
5. repeat the process until you finish with the batter.

– Presentatiom
1. spread the syrup in the center of the crepe.
2. Fold in half, and again in half.
3. Put it on the plate and you can decorate it with icing sugar and blueberries.
