This easy French macaron recipe makes cookies that are crispy outside but soft and chewy in the center.

Yield 20 macarons
Macarons ingredients:
powdered sugar 1 ¾ cups
almond flour 1 cup
salt 1 tsp
egg whites 3
granulated sugar ¼ cup
vanilla extract ½ tsp
gel food coloring
Buttercream ingredients:
unsalted butter ½ cup
powdered sugar 1 ½ cups
vanilla extract ½ tsp
heavy cream 2 tbsp
Preparation:
All ingredients must be at room temperature
1. Sift the almond flour and powdered sugar into a large mixing bowl. Mix together the almond flour, powdered sugar and ½ tsp salt. Set aside.
2. In a separate large bowl, beat the egg whites and ½ tsp of salt until soft peaks form. Gradually add the granulated sugar until fully incorporated. Continue to beat until stiff peaks form.
3. Add the vanilla and beat until incorporated. Add the food coloring and beat until just combined.
4. Gradually add the almond flour mixture to the beaten egg whites and gently fold until the batter falls into ribbons. Check to see that the mixture is beaten enough by making a figure eight with the batter as it falls from the spatula.
5. Transfer the macaron batter into a piping bag fitted with a round tip.
6. Pipe the macarons onto the parchment paper in circles, spacing at least 1-inch apart.
7. Tap the baking sheet on a flat surface a few times to release any air bubbles.
8. Let the macarons sit at room temperature fo 1 hour.
9. Bake at 300˚F for 15 min.
10. Transfer the macarons to a wire rack to cool completely before filling.
11. For the buttercream: In a large bowl, add the butter and beat until light and fluffy. Sift in the powdered sugar and beat until fully incorporated. Add the vanilla and beat to combine. Add the cream and beat to combine.
12. Transfer the buttercream to a piping bag fitted with a round tip.
13. Add a dollop of buttercream to one macaron shell. Top it with another macaron shell to create a sandwich.
14. Place in an airtight container for 24 hours to “bloom”.
