In this video I show you how to make a simple Rocket salad with a beetroot, you can add, roasted pinenut or butternut, toasted butternut seed to take the flavor to another level with a drizzle of vinaigrette and finish off with a glossy balsamic reduction.
INGREDIENTS
1 Pack of Rockets salad
3 Roasted beetroot
Red And Green Roasted peppers
Roasted Squash
Olive oil
Black pepper
pinch of salt
Pinenuts
Basic French Dressing
VINAIGRETTE
INGREDIENTS
300ml vegetables oil
100 white wine vinegar, red wine vinegar, sherry vinegar etc.
salt and pepper to taste
Method
Combine the vinegar, mustard and onion and leave to rest for 15- 25 minutes
Whisk in the oil.
Adjust the seasoning with salt and pepper add sugar and herbs.
