THE INGREDIENTS
For the Chicken OR Salmon
-4-6 Chicken Thighs or Breasts (Chef J will be using bone-in skin-on thighs, use whichever you prefer)
-**Alternate** 4-6 Skin On Salmon Portions can be used instead of Chicken (live instruction will include preparation for both)
-1 TB EVOO
-S&P
-2 TB butter
-1/4 cup light or dark brown sugar
-1/4 cup honey
-2TB dried basil
-4 cloves minced garlic
-1 tsp red pepper flakes (optional)

For the Salad
-1 pint of cherry tomatoes (any quality tomato sliced as alternative)
-1 8oz ball of mozzarella or 1 container of mozzarella balls
-1/2 cup of pitted kalamata olives
-handful of fresh basil leaves (1 tsp dried alternate)
-1/4 cup EVOO
-2TB red wine vinegar (apple cider, champagne, balsamic, or other flavored vinegars can be used as alternate)
-2TB dijon mustard
-1 clove of garlic
-1 tsp honey
