French Onion Soup
INGREDIENTS
2 cups water
1 packet Herb Ox low sodium beef bullion
1 bay leaf
1/2 large onion sliced thinly
Salt & pepper
Spring of fresh thyme
DIRECTIONS
1. Sauté onion in a tiny bit of bacon grease & olive oil
2. Once onion is tender and translucent, deglaze pot with less than 1/4 cup wine (can use red or white)
3. Add 2 cups liquid and bouillon with bay leaf & thyme
4. Simmer for about 10 minutes to reduce
5. Add slice of French bread that has been toasted in the oven into an ovenproof soup bowl
6. Top bread with a white cheese of choice & put beneath broiler to brown and melt
7. Serve & top with cheese
