We are back with another amazing dish that will warm you up on a cold day and envelope your mouth with flavor, French Onion Soup! This is one of Chef Taylor’s all-time favorite recipes, is budget friendly, and only has 6 ingredients. This recipe is simple but the more love you put in, the more it pays off in the end. Did we mention the crispy cheese layer that you must punch through to get to the soup?!

Ingredients:
Yellow Onions | 2.5 pounds (3 large onions), ½” Dice
Shallots | 2.5 pounds (20 large shallots), ½” Dice
Chicken Broth | 4 cups
Water | 3 Cups
Beef Base | 2 Tablespoons
Brandy (or Sherry/Marsala Wine) | ½ Cup
Kosher Salt | 1 Teaspoon
Black Pepper | 2 teaspoons
Olive Oil | 2 Tablespoons
Hoagie Rolls (or Sliced Bread) | 2 Each (or 1 slice for each
bowl)
Cheese, Gruyere (Provolone, Swiss, Muenster, Havarti, etc.) |
2oz per bowl

Directions
1. Preheat oven to 375* F
2. Dice onions and shallots ½”x ½”
3. Heat stock pot over medium heat, add onions to begin caramelizing. Stir
often to cause even browning and prevent burning
4. Turn heat to low once caramelizing has begun. Continue browning onions,
stirring frequently, for 30-45 minutes or until they have taken on a dark
brown color
5. Slice hoagie rolls into ¾” sections, smash to flatten (or cut circles out of
sliced bread to match the width of your bowl)
6. Transfer bread slices to cookie sheet, spray with oil, sprinkle with salt, and
place in oven for 15 minutes or until golden brown and crispy. Remove
from oven and set aside. Change oven setting from bake to broiler.
7. Once onions are brown and fond is sticking to the pan but not yet burning,
deglaze with ½ cup brandy, stir to release fond and incorporate flavor
8. Once brandy has evaporated, add chicken stock and water
9. Add 2 tablespoons beef base and stir to dissolve
10. Taste soup and season with salt and black pepper to your preference
11. Ladle soup into oven safe bowl or coffee mug. Place croutons in bowl/cup
to cover surface. Sprinkle cheese over croutons. Lots of cheese.
12. Place bowls/ cups under oven broiler until cheese is golden brown and
bubbly.
13. Serve hot and enjoy
