If you want to caramelize the onions for full flavor get a huge pan and cook them on low for up to two hours as I did in the demo. If you want to do them fast and easy, just saute them in your pot for a few minutes and they will be delicious that way too.

Here is what you will need:

For maximum flavor use several kinds of onions, shallots, red onions, white onions, green vidalias, sweet onions, and leeks. Can’t find all of those? At least use leeks and yellow onions.

Some good stock, chicken or beef is fine. If you do not have home made, use boxed. I would not use canned. Bone broth is good too. I used 3 quarts of homemade duck stock, no salt. I added some salt and fresh pepper to taste at the end.

I used a 6 quart Instant Pot. If you are only cooking for one person, you can use a 3 quart IP. Or you can use a slow cooker, it will just take all day to cook.

Directions are quite simple.

Once the onions are cooked as in the video, add the some white wine if you want to. I use 1 cup of vermouth, but it is optional. Any wine will do. It adds depth of flavor. Put the onions in the cooker, fill with stock. Push the soup button. The Instant pot will cook for 30 minutes once it comes to pressure. If you are using a slow cooker it will take about 6 hours on low.
