Vinegar is French for ‘sour wine’ because for centuries nobody made it on purpose – it was just what happened when you left the wine barrel open too long.

The Romans called it vinum acetum and used it because spoiled wine kept longer than fresh wine. Medieval French vintners eventually figured out how to ruin wine reliably by building shallow vats with airholes and letting bacteria do the work.

Today industrial vinegar is made in 96 hours using engineered bacteria, but the process is identical: let air at the wine until it goes bad. That’s why vinegar tastes like wine that went wrong – because that’s exactly what it is.
