A homemade (nearly) traditional, rich, delicious, French onion soup.
My recipe:
A good piece of butter (also some duck fat if you have some)
1 kg of onions
1 glass of red wine
2L of stock (pork, chicken or veg)
fresh thyme and bay leaves
500ml of cream
salt and pepper
croutons: sliced bread, chopped onions from the soup, cheese on top – gratinated
En Français:
un bon morceau de beurre
1kg d’oignons
1 verre de vin rouge
2L de fond de porc ou poulet
thym et laurier
500ml de crème liquide
sel et poivre
pour les croutons: pain tranché, compote d’oignons, fromage de vache – gratiné
