Do you want to know how to make omelet. In this video Ilya Shalev will show you how to make real French omelet with Caramelized onions and port wine. If you will repeat this recipe you will never ever use any omelet maker.

For onion confiture

100 g red (or any other) onion
30 g butter
100 g port wine
Some chopped parsley
Salt
Slice onions , add butter , salt and wine, bring to high heat and let liquid evaporate and onions get nice red color and softened

For an omelette

3 eggs
30 g cream
Pinch of salt
Whisk eggs and cream with some salt
Bring pan to high heat , add butter and then egg mixture. Vigorously shake the bottom and edges of the pan to control the texture — it should be runny
Set aside
Add some onion confiture and try to flop it to the rare edge of pan working with silicon spatula . Flip on the plate , and decorate with sauce

For sauce
100 g cream
Pinch of salt
Some chopped parsley.
