My quick and easy interpretation of the famous Basque country dish. Healthy. Swoon-worthy. Might be keto friendly (I’m not sure). Make the dish once, and thereafter you won’t require a recipe. Ingredients are posted below.

CHICKEN PIPERADE
Olive oil — about 2 tablespoons
Salt and pepper to taste
4 large or 8 small chicken thighs (skin-on bone-in if you can find!)
Splash dry French vermouth (or dry white wine or chicken stock)
1 (6-ounce) can plain tomato paste
Splash balsamic vinegar
