This keto French Onion Soup recipe is the perfect comfort food for those brisk, wintry days. You can even double or triple this recipe and save yourself the trouble of trying to figure out dinner when you’d rather be relaxing.

INGREDIENTS:

1/2 cup butter
4 medium onions
3 garlic cloves
1 teaspoon fresh thyme (finely chopped)
4 cups beef bone broth
1/4 to 1/2 teaspoon xanthan gum
8 oz. grated gruyere cheese
1–2 bay leaf
1 teaspoon of salt
1/4 tsp. black pepper (optional*)
1 scoop Unflavored Perfect Keto Collagen

INSTRUCTIONS

1. Melt butter in a large stock pot over medium-high heat. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are caramelized (about 15 minutes). Discard bay leaf. Reduce heat down to medium-low. Add the beef broth and 1/4 teaspoon of xanthan gum, bring the soup back to a simmer, and cook for 10 minutes. Add more xanthan gum for thicker soup of desired, adding only a pinch at a time. You can add unflavored collagen at this time as well.
2. Portion soup into bowls. Before serving, sprinkle each bowl with grated cheese. Broil until golden brown and bubbly.
3. For a more traditional French onion soup recipe, use a slice of prebaked 4-ingredient keto almond bread in soup. Toast bread well, add to soup, then sprinkle with grated cheese, and broil.
