This French Toast Cake is cozy, slightly nostalgic, and honestly way too good to be made from leftovers.
If your hot cross buns aren’t quite as soft as yesterday — perfect. That’s exactly what makes them ideal for this recipe.

and the kind of brunch dessert that disappears way too fast

Ingredients
French Toast Base
1 large hot cross bun, sliced in half
1 egg
1 egg yolk
100 g milk (about ⅓ cup + 1 tbsp / 3.5 oz)
30 g heavy cream (about 2 tbsp / 1 oz)
50 g sugar (about ¼ cup / 1.8 oz)
Pinch of salt
½ tsp vanilla extract
20 g butter for frying (about 4 tsp / 0.7 oz)
Cinnamon Sugar
25 g sugar (about 2 tbsp / 0.9 oz)
¼ tsp cinnamon
Cherry Sauce
200 g frozen cherries (about 1⅓ cups / 7 oz)
30 g sugar (about 2 tbsp + 1 tsp / 1 oz)
50 g water (about 3 tbsp + 1 tsp / 1.8 oz)
10 g cornstarch (about 1 tbsp / 0.35 oz)
30 g water for the starch slurry (about 2 tbsp / 1 oz)
1 tbsp rum (about 15 g / 0.5 oz)
Cream Filling
190 g sour cream (about ¾ cup + 1 tbsp / 6.7 oz)
30 g powdered sugar (about ¼ cup / 1 oz)
140 g heavy cream (about ⅔ cup / 5 oz)
Method
Whisk together the egg, egg yolk, milk, cream, sugar, salt, and vanilla
Soak the hot cross bun halves well
Fry in butter until golden on both sides
Roll the edges in cinnamon sugar
Cook the cherry sauce and finish with rum
Whip the cream filling
Layer: toast, cream, toast, more cream
Finish with cherry sauce
