1 tube Pillsbury Pizza Crust
2 large onions thinly sliced
2 tbsp butter + 1 tbsp olive oil
3 tbsp beef broth
1 tsp fresh thyme
1/2 cup shredded Gruyère
Garlic Butter Topping:
4 tbsp melted butter
1 tsp garlic powder
1 tbsp fresh parsley chopped
1 tbsp grated Parmesan
Optional: extra beef broth for dipping
Cook onions in butter and olive oil over medium heat for 30-40 minutes until deep brown and jammy. Add thyme at 20 minutes and beef broth 1 tbsp at a time during the last 10 minutes. Make sure all liquid is completely gone before cooling.
Preheat oven to 400F. Cut pizza dough into 8 equal squares and stretch slightly.
Add a spoonful of cooled onions and Gruyère to each square. Pull all 4 corners up and pinch tightly to seal. Place seam side down on parchment lined baking sheet and brush with melted butter.
Bake 12-15 minutes until golden brown.
Mix remaining butter, garlic, parsley and Parmesan and brush generously over hot knots straight out of the oven.
Serve with warm beef broth for dipping for the full soup experience! 😋
