INGREDIENTS :
500g fresh beans
For the masala paste
1 Sliced onion
2-3 garlic cloves
¼ cup peanuts
1 tsp coriander
½ tsp cumin
2 green chilli
3-4 red chilli
1-2 tomatoes chopped
coriander leaves and mint leaves
For Cooking:
1 Diced Onion
1 tsp cumin seeds
A few curry leaves
1 tsp ginger garlic paste
1-2 tsp red chilli powder
¼ tsp turmeric powder
1 tsp garam masala powder
2 tbsp curd (optional)
METHOD:
Fry all the masala paste ingredients until aromatic and grind into a paste.
Heat oil in a pan. Add cumin/mustard, curry leaves and let them splutter. Add ginger, garlic and saute for a minute. Add diced onion and sauté till soft.
Next, add ground paste and simmer for 1- 2 minutes. Now add chopped French beans, salt, a little water, cover and cook till tender.
Add chilli powder, garam masala and turmeric powder and give a good mix. Cook for 5–7 minutes till thick, and the oil slightly separates.
Serve hot and enjoy!
