FULL RECIPE ⬇️
STEP 1: BOIL POTATOES
700g Potato (peeled & diced)
1L Water
1L Milk
10 Garlic cloves (peeled & roughly chopped)
In a big pot, add water and milk.
Heat up the pot, then add in the garlic and potatoes.
Bring everything to a boil, stir once in a while, and when the potatoes are fork tender, drain it.
STEP 2: MASH POTATOES
Using a potato ricer / fork, smash the potatoes and garlic finely. Set to the side.
STEP 3: MAKE PATE À CHOUX
250g Water
125g Butter
5g Salt
150g Low Protein Flour / Cake Flour
4 Eggs
In a small pot, add in water, butter and salt. Heat up the pot over low heat and slowly let the butter melt into the water.
Once the butter is melted and the water is simmering, add the flour. Using a spatula, mix the flour into the water/butter until it turns into a thick dough.
Take the pot off the heat, let cool for 2min, then add one egg to the dough. Mix the egg into the dough with a spatula thoroughly, then add another egg and mix again. Repeat until you’ve added in a total of 4 eggs.
STEP 4: MAKE POTATO BALLS
Mix together the Mash Potatoes with the Pate a Choux until everything is well incorporated.
Then take half a tablespoon of dough, drop it in a plate of flour, cover it fully in the flour and give it a quick round shape. Repeat until all the dough turns into potato balls.
STEP 5: FRY POTATO BALLS
Lastly, fry the potato balls in hot oil until nice and golden. Then serve immediately!
