Today I cook a massive beef rib rack the old French way — in a deep earth oven, with fire and time.

In rural France, I put this piece of meat into a traditional earth oven and leave it there for hours.

This is not kitchen cooking.

Just fire cooking — buried, sealed, and slowly breaking down with heat and fat.

No rush. No tricks.

Just meat, fire, and time.

In the end — soft, falling apart, full of juice.

    I enjoy watching. Used to live in the country in California. Miss those days when we could cook large portions.
    Now live outside Phoenix Arizona basically a city . Just enjoy it ! Hopefully many others can watch you . My French is pretty bad even with two years of it in college. Merci!

  4. Thank you! That’s an interesting way to finish off the ribs. I usually just smoke them but I’ll have to try finishing them in a braise next time.
    I should add, you’re living my dream. The country, geese, chickens, orchards what more does a person need. You’ve got it figured out!
