A 10 year obsession with 3 Michelin starred Bernard Pacaud’s chocolate tart, a signature dish at his restaurant L’Ambroisie
It’s a chocolate tart but instead of a heavy chocolate ganache, he folds chocolate into a whipped sabayon of eggs and sugar, then bakes it lightly so that it holds its shape but is still very soft and creamy
Good reference recipe if you want to attempt it: https://www.kih.com.hk/GaggenauHomeChefs/tarte-aux-chocolat-bernard-pacaud/

Rich people behaviour
“Social media wasn’t a thing back then”? My guy blogs of ALL kinds existed, 4chan, reddit, Facebook, AND Twitter were all active and had been around for like 5+years; you could’ve just said something like “I couldn’t find it on social media” or “I wasn’t active on social media” instead of basically lying saying that “social media didn’t exist then”. Aside from that ridiculousness this was a good video about a tart👍
So did you manage to make the same? Did you make it worse?
I thought whipping eggs and sugar makes meringue? Sabayon is doing it on heat.
2014 wasn’t that long ago, it’s just been 12 years… wait

That's gorgeous! It almost looks like honeycomb from the air incorporated into the filling. It's so cool that after such a well earned journey you finally had the OG of your 10 year quest. ❤
