Today I’m sharing a simple French pear pudding that’s wonderfully easy to make and tastes delicious. This lovely recipe comes from a traditional French cookbook called Cooking with the Young Chefs of France, and the author describes it perfectly — it couldn’t be easier to make, and it’s just as good served warm or cold.
This is a simple baked pear dessert with soft fruit suspended in a light, creamy batter. There’s only a small amount of flour in the recipe, which means it converts beautifully to gluten-free, and it’s very forgiving. I’ve also tested it with other soft fruits — including canned peaches — and it works beautifully.
The batter is quick to mix and quite thin — this is exactly how it should be. Taking a little extra time to properly mix the eggs into the flour and sugar, then slowly adding the milk and cream, creates a smoother batter and a more delicate pudding.
The pears are sliced generously and folded through the batter, making this dessert feel rich and comforting, yet surprisingly light. Finished with a sprinkle of sugar and dots of butter, it bakes until golden, bubbling, and beautifully tender.
I love serving this pear pudding simply with thick, cold cream, but it’s also lovely on its own, warm, cold or at room temperature.

I know I’ve been on a bit of a French cooking streak lately — I tend to go through these phases 😊I do love the French style of cooking though — I think those techniques are really woven into the way we cook. It’s everywhere, really.
I filmed this one a few weeks ago and it’s been waiting its turn, but I just had to share it because it’s so easy to whip up — and I’ve made it lots of times now. Pears always seem to be quite affordable here in Australia too.
My latest phase has been just lovely old-fashioned comfort food, so I have some nice family meals coming over the next few weeks that I’m looking forward to sharing.

I'min the market for a pear recipe but am allergic to milk and cream so this one is out. On reflection, it has too much sugar — the pears I get are very sweet — and the liquidy batter does not appeal to me. I guess I will have to look elsewhere.

Bonjour Lee, je fais souvent des clafoutis, même si le «vrai» clafoutis ne se fait que aux cerises. J’utilise toutes sortes de fruits, j’ajoute un peu de rhum et 40 g d’amandes en poudre. This reminds me of a French sweet called flognarde, which I think is traditionally made with cherries, but i was introduced to it when I found a recioe for a mango flognarde using coconut milk. Being a big fan of mango, I had to try it, the dish was simple and delicious. The batter seems the same, but it was made like a quiche with the fruit spread into the pan and the batter was poured over the fruit.
With the custard should be delicious 😋
