• Brush one whole piece of Beef Tenderloin (500g) with olive oil, pepper, and salt. Place in a pan and cook a few seconds on high heat (do not overcook).
• Brush the steak with 1 tbsp melted butter mixed with ½ tsp dried thyme and ½ tsp dried rosemary. Bake at 180C for 37’ (for medium well).
• In the same pan, heat 1 tbsp olive oil, then add 1 chopped onion and sauté, then add 2 chopped garlic cloves and sauté until fragrant.
• Add ½ cup beef broth, ¾ tsp dried thyme, ¾ tsp dried rosemary, 60g brie cheese (cubed), 100ml heavy cream, 1 tbsp whole mustard seeds, pepper, and salt. Let simmer until the brie cheese softens, then blend until a rich sauce forms.
