Burgundy Food: The Dishes Every Food Lover Needs to Know

Burgundy isn’t just the home of great wine. It’s one of the most extraordinary food regions in all of France — and the dishes that come from this landscape are some of the most important and most delicious in the entire French culinary canon.

Bœuf Bourguignon is the dish the whole world thinks it knows — but the real history behind it is far more surprising than most people realise. A peasant dish born from tough cuts and good wine, first documented in 1867, codified by Escoffier in 1903, and more associated with Paris than Burgundy for most of its history. Until Burgundy decided to claim it. Very French.

Coq au vin is the two thousand year old victory meal legend that may or may not involve Julius Caesar, a rooster sent as an insult, and a dinner that changed the course of Gallic history. Every region of France has its own version — and each one tells a different story.

œufs en Meurette is eggs poached directly in red wine sauce, served on garlic toast with lardons and shallots. One of the most quietly perfect things you will ever eat — and the dish that threads the same sauce through an entire Burgundian meal in a way you will never forget.

Gourgéres are the cheese puff that Burgundy serves before you’ve even sat down. Hollow, light, dangerously addictive — and protected by an actual Brotherhood of Gougère Tasters. Because of course it is.

Jambon Persillés is the most beautiful thing on any Burgundian market stall. Ham set in vivid green parsley jelly, sliced to reveal a marbled pattern of pink and herb. A fourteenth century Easter tradition that deserves far more attention than it gets.

Poulet Gaston Gerard, a dish born entirely from a kitchen accident in 1930, when a jar of paprika fell into a casserole being prepared for the most influential food critic in France. The quick-thinking woman who rescued it created something magnificent — and it was named after her husband. 1930s France in a nutshell.
