Hot soaking removes excess surface starch and starts softening the outer layer, which helps French fries turn out crispier.

Method:
1. Cut potatoes into French fries and rinse them in cold water.
2. Soak the fries in hot water for 10 minutes.
3. Drain, pat the fries very dry, then toss lightly with oil and salt.
4. Air fry at 350°F / 175°C for 10 min to soften the inside.
5. Shake, then air fry at 400°F / 205°C for 10–15 min until the French fries are crisp and golden.

Tips:
Russet potatoes work best — high starch = crispier crust.
Do not overcrowd the basket, or the fries will steam instead of crisp.

  1. Yeah I don't think that's true because every restaurant I have ever worked in all their fries come out extra crispy and they soak them in ice cold water was salt and baking powder
