• yellow onions – 1 kg (2.2 lbs)
• unsalted butter – 50 g (1.8 oz)
• vegetable oil – 15 ml (1 tbsp)
• granulated sugar – 5 g (1 tsp)
• all-purpose flour – 15 g (1 tbsp)
• dry white wine – 150 ml (0.6 cup)
• beef or chicken broth – 1 L (4.2 cups)
• fresh baguette – 1 pc
• hard cheese (Gruyère or Swiss) – 150 g (5.3 oz)
• salt & black pepper – to taste

Chef’s Tips:
🔹 The Rule of Patience: Do not rush the onions. Caramelization takes at least 30-40 minutes on medium-low heat. This is where 100% of the soup’s deep umami flavor and color come from.
🔹 Deglazing Magic: When you pour the white wine, use a wooden spatula to scrape the bottom of the pan. Those browned bits (the fond) contain the most intense flavor.
🔹 The Toast Guard: Lightly toast the baguette slices before adding the cheese and placing them on the soup. This creates a structural barrier that prevents the bread from turning into mush instantly.
