Award-winning French dining, harbour views and champagne opened by sabrage… this one felt very special.
Before dinner, we made a stop at the champagne bar for oysters, scallops and one of the most dramatic champagne serves we’ve had in a long time. Then it was into a beautifully executed lineup of French-inspired dishes.
Think silky O’Connor black angus beef tartare, a perfectly cooked wagyu rump, and whole flounder kissed by charcoal with creamy coconut alongside it. Then two elegant desserts to finish, a delicate pear tart with macadamia cream and a dark chocolate, mint and pandan sponge that was rich but still light.
