Made start to finish in our Overmont Dutch Oven, this recipe combines buttery mashed potatoes with slow-caramelized onions, melted gruyere cheese, and fresh thyme for a side dish that’s warm, indulgent, and perfect for any dinner table. 🧅✨

Serves 8

Ingredients:
• 2 tbsp salted butter
• 2 tbsp neutral oil, such as canola
• 6 large white or sweet onions, thinly sliced
• Salt and freshly ground pepper
• 1.5 kg potatoes, peeled and quartered
• 1 stick (½ cup) salted butter, cubed
• 1 cup whole milk, plus more to taste
• 1 cup finely grated gruyere cheese
• 2 tsp thyme leaves

Method:
Caramelize the onions slowly in butter and oil until deeply golden and sweet. Boil the potatoes until fork-tender, then mash with butter and milk until smooth and fluffy. Fold in the gruyere cheese and thyme, mix in half the caramelized onions, then swirl the remaining onions on top for the perfect cozy finish.
