My French Grandpa’s GOUGÈRES Recipe ⬇️✨

There are many variations to Gougère (French Cheese Choux Puffs) that you can make, but this is the most basic, simple & traditional recipe that Grandpa’s been making for decades.

Many people now add more cheese in the dough, sometimes even additional bechamel or ham. But if you like it plain jane, this is the recipe for you!

I like it a little more indulgent so I eat these little choux puffs with extra cream cheese and ham (like a little sando) but grandpa eats it on its own 😋 whatever floats your boat.

Ingredients:
250g Water
125g Butter, cut into small pieces
5g Salt
150g Low-Protein Flour (Bread/Cake Flour)
4 Eggs
Grated Emmental Cheese

How to Cook:
1. In a pot, add water, butter and salt. Heat up the pot over low heat and slowly let the butter melt into the water.
2. Once the butter is melted and the water is simmering, add the flour. Using a spatula, mix the flour into the water/butter until it turns into a thick dough.
3. Take the pot off the heat, then add one egg to the dough. Mix the egg into the dough with a spatula thoroughly, then add another egg and mix again. Repeat until you’ve added in a total of 4 eggs.
4. Place the dough in a piping bag, then on a baking tray, pipe out the dough into little mounds – about 1tbsp.
5. Add grated emmental to the top of each gougere mound. Then place the baking tray in a preheated oven, at 220*C for 20-25min.
6. Take the Gougeres out of the oven, let cool for 10-15min and serve!
