    Here is the full recipe for these classic homemade croissants — light, buttery, and beautifully layered.

    Ingredients:
    200 g warm water (¾ cup + 1 tbsp)
    200 g warm milk (¾ cup + 1 tbsp)
    1/4 tsp salt
    2–3 tbsp sugar
    28 g fresh yeast (0.9 oz) or 2 tsp dry
    40 g butter (3 tbsp)
    750–800 g flour (5 1/2–6 1/3 cups)
    2 eggs (1 yolk reserved)
    250 g soft butter (for layering)

    Directions:
    1. Mix all ingredients except the soft butter to form a soft dough.
    2. Knead well — 10 minutes by hand or 7 minutes in a mixer.
    3. Let rise for 1 hour.
    4. Divide into 16 pieces, roll each into a circle, and spread with soft butter.
    5. Stack all circles, roll into a large sheet, cut into triangles, shape croissants.
    6. Let rest for 15 minutes, then brush with yolk + milk.
    7. Bake at 400°F (200°C) for 22–23 minutes.

  3. 😳 I took classes… in the last week of earning a “certificate” I was fed up with the so-called chef (and more) and walked. Didn’t get my “certificate”; cried a lot. Your instructions were far different than what I was shown… I’ll give this and others a try… 😊. I made crepes and was successful ( my grandfather—father made crepes for us). I figured I would be good at making your Mexican wraps (?) lol. Loved your video, how you were able to insert text. Wondering how you did it….
