🥣 Ingredients
• Leftover Rice – 50–100 gm
• Boiled Potato – 2 (medium)
• Breadcrumbs – 3–4 bread slices (crushed)
• Cornflour – 2 tbsp
• Chilli Flakes – 1 tbsp
• Oregano – 1 tbsp
• Table Salt – as per taste
• Fresh Green Coriander – finely chopped
• Oil – for frying

👩‍🍳 Method

Step 1: Make the Dough
In a bowl, mash boiled potatoes completely smooth.
Add leftover rice and mash again so it blends well.
Mix in breadcrumbs, cornflour, chilli flakes, oregano, salt, and green coriander.
Knead everything together to form a soft but tight dough.
If sticky, add a little more breadcrumbs.

Step 2: Roll the Dough
Place the dough on a greased board or butter paper.
Using a rolling pin (chakla belan), roll it evenly into about ½ inch thick sheet.

Step 3: Cut into Fries
With a knife or chopper, cut long vertical strips like fries.
Carefully separate each strip.

Step 4: Frying
Heat oil on medium flame.
Gently slide the fries into hot oil and fry until golden brown and crispy from outside.
Flip occasionally for even cooking.

Step 5: Serve
Remove on tissue paper and serve hot with ketchup or mint chutney.
