I make this when I miss France. A simple ratatouille. Easy, cozy, and delicious.
INGREDIENTS
Extra-virgin olive oil
1 sweet onion
1 cup crushed tomatoes
Salt and black pepper
Herbs de Provence
Mediterranean vegetables such as zucchini, yellow squash, eggplant, and Roma tomatoes
METHOD
Dice an onion and sauté in 1 tbsp olive oil over low heat until soft.
Add crushed tomatoes, salt, pepper, and herbs. Simmer 10–15min until thick and jammy.
Thinly slice mediterranean vegetables into uniform rounds.
Alternate slices and arrange them in the pan, slightly overlapping, in a tight spiral over the sauce.
Drizzle with extra-virgin olive oil and sprinkle lightly with salt, pepper, and herbs.
Cover with lid and bake 40min covered at 350•F. Then remove cover and bake 15–20min until tender.
