This Sesame Sourdough Loaf from @handmethefork achieves the perfect rise in our Signature Oval Bread Oven, then gets transformed into a French-inspired grilled cheese layered with raclette, Gruyère and finely chopped cornichons. Ingredients (makes 2 loaves):
For the Levain:
50 g mature (unfed) sourdough starter
50 g bread flour
50 g whole wheat flour
100 g warm water

For the Dough:
600 g bread flour
100 g whole wheat flour
300 g all-purpose flour
200 g levain
750 g warm water, divided
20 g kosher salt
Rice flour, for dusting the bannetons
1 cup toasted sesame seeds, for shaping

French Grilled Cheese:
2 slices sesame sourdough
2–3 tablespoons grated Gruyère
2–3 oz raclette, sliced
2 tablespoons cornichons, finely chopped
2 tablespoons mayonnaise
1–2 teaspoons neutral oil (such as avocado or sunflower)
