These chocolate-dipped leaf cookies are the most beautiful cookies you will ever make — and all you need to shape them is a large tablespoon and a butter knife. My mum made these every time we had guests, and the reaction was always the same: everyone stopped talking the moment they saw them.

Soft shortbread dipped in chocolate, finished with crushed pistachios or almonds — that pistachio and chocolate combination will immediately remind you of the famous Dubai chocolate. Except this recipe has been part of French home baking for generations.

🍂 CHOCOLATE-DIPPED LEAF COOKIES WITH PISTACHIO & ALMOND

FOR THE DOUGH:
• 125g unsalted butter, softened
• 1 egg
• 1 cup cornstarch
• 1 cup sunflower oil
• 1½ cups confectioner’s sugar
• 1 tsp baking powder
• 2½ cups flour (sifted in slowly at the end!)

FOR THE CHOCOLATE DIP:
• Milk or dark chocolate (your choice)
• 2–3 tsp shortening (makes the chocolate smooth for dipping)

FOR DECORATION:
• Crushed pistachios
• Crushed almonds

INSTRUCTIONS:
1. Mix butter, egg, cornstarch, oil, sugar and baking powder together until smooth.
2. Sift the flour and add it SLOWLY — this is the secret to soft, non-dry cookies!
3. Mix until a smooth, soft dough forms.
4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
5. Use a large tablespoon to shape each cookie into a leaf directly on the sheet.
6. Use a knife tip to mark leaf veins — one center line, smaller lines branching out.
7. Bake 12–15 minutes until very lightly golden at the edges. Cool completely.
8. Melt chocolate with shortening. Dip one side of each cookie.
9. Sprinkle with crushed pistachios and/or almonds while chocolate is still wet.
10. Let set at room temperature or refrigerate 10–15 min.

Makes 45–50 cookies!
