French Born, Chef Raphael started his career in Lyon, the capital of the French gastronomy where he studied at the Paul Bocuse Institute, Chef of the Century, for three years before heading to Paris.
In 2003, Raphael joined two of the most famous three starred Michelin restaurant in Paris; first the Four Seasons Hotel George V under Philippe Legendre and then Guy Martin at the Grand Vefour.
In 2006, Raphael decided to take a new adventure to Asia and especially Guangzhou in China: first with Accor and the opening of their first property in the city, then with the Ritz Carlton for four years and a half and finally for the opening of the restaurants of the Canton Tower, one of the tallest building in the world.
In 2013, Raphael left China to new horizons in Vietnam to be part of the exciting opening of the JW Marriott in Hanoi and to create a new French dining experience in the city at the French Grill.
Raphael is also a musician; he enjoys playing bass jazz, piano and guitar during his free time and a sport fan, especially Rugby!
Through his journey, Raphael has met a lot of special people, chefs, and hoteliers and has never stop learning from each of his connections. But he was really inspired by his first chef, Chef Petagna “Meilleur Ouvrier de France”, who taught him the love of the products and the passion of working with them.
The French Grill restaurant offers 82 seats in a simplistic modern design and lively setting, a semi-private and a private dining room, walk-in wine cooler with a selection of the finest wines in the world, and one of the largest open kitchen in Hanoi to complete this must see eatery in town. True French classics combined with the best to offer from the grill, prepared with the very best of products available in Vietnam.
